Where the Mediterranean and Atlantic currents converge, and the constant exchanges of water between both seas, off the coast of Estepona, Is the first underwater winery in Spain with a health license for the ageing of wines in an underwater environment, a maritime-administrative concession that shares space with the breeding and cultivation of oysters and scallops.

Immersed at depths ranging from 20 to 30 meters during the coldest months, white, red, and sparkling wines undergo a natural rocking process from September to June. This subaquatic maturation enhances their flavours, providing an extraordinary experience where the wines evolve internally while bursting with life externally.
Benefiting from the nutrient-rich waters and the protective environment of the concession and oyster farm, the wine bottles become home to a diverse ecosystem. Rose hips, polychaete worms, macrophyte algae, sponges, white coral, mussel-type bivalves, scallops, oysters, and more attach themselves to the glass or calcify on its surface.
